Ingredients

    • 5 low carb, high fiber (or regular) tortilla wraps
    • 1 lb. ground beef
    • 1/2 cup onion chopped
    • 2 TBSP Cumin
    • 2 TBSP Chili Powder
    • 2 TSP Oregano
    • 1 TBSP Paprika
    • 4 ounces reduced-fat shredded cheddar cheese
    • 1 cup fresh tomatoes chopped
    • 1 cup lettuce chopped

     

    Instructions

    1. Preheat a large skillet over medium-high heat and spray with cooking spray

    2. Cut 1 tortilla into quarters and arrange in skillet

    3. Toast and crisp the tortilla quarters until golden brown on both sides.

    4. Add ground beef, onion, and seasonings to the skillet and cook until the beef is browned and the onion is tender.

    5. Drain grease from beef and let cool slightly

    6. Spoon about 1/2 cup of the beef mixture onto the center of the tortilla, leaving a 1 1/2 inch border

    7. Layer 1/4 cup of cheese, 1/4 cup of tomato, and 1/4 cup of lettuce over the beef mixture

    8. Place 1 toasted tortilla quarter on top and fold the sides of the tortilla toward the center to form pleats that cover the toasted tortilla

    9. Toast and crisp the wrap for 2 minutes on each side, pressing occasionally with a spatula
