Ingredients

  • 1.5 lb skirt steak
  • 6 to 8 cloves of garlic, peeled
  • 2 TBSP olive oil
  • 4 TBSP salted butter
  • 2 TBSP fresh parsley or green onion, chopped
  • Salt and pepper to taste

 

Instructions

1. Rinse the skirt steak off and pat it dry with paper towels. Trim any excess fat and tenderize if you wish. Cut into quarters.

2. Sprinkle both sides with salt and pepper to taste.

3. Finely mince the garlic and sprinkle it with salt. Set aside with the butter

4. Put oil in a skillet over medium-high heat. Add the steak and cook 2 to 3 minutes on each side. Remove to plate, cover with foil, and let rest while you make the butter.

5. Melt the butter over low heat, add the garlic/salt mixture and cook for a few minutes until the garlic starts to brown.

6. Slice the steak against the grain, pour the garlic/butter sauce over the meat and sprinkle with parsley or green onion.
