Jamaican Jerk Meatballs

One of the most delicious ways to prepare our fresh pork and ground beef!

Ingredients:

  • 1 small onion
  • 3/4 medium red bell pepper (diced)
  • 4 cloves garlic (minced)
  • 1 lb Hunter Cattle fresh pork
  • 2 lb Hunter Cattle ground beef
  • 3/4 panko breadcrumbs
  • 3 large eggs (beaten)
  • 1/2 cup pineapple juice
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 1/4 TBSP Worcestershire sauce
  • 5 tsp Jamaican jerk seasoning
  • 1 tsp Himalayan salt
  • Black pepper to taste

Steps:

  1. Preheat the oven to 375 degrees and line a baking sheet with aluminum foil or parchment paper sprayed with cooking spray.
  2. In a stove-top pan, saute the diced onion in a couple of tablespoons of olive oil, just until translucent. Add the minced garlic and continue to saute for another 2 minutes. Set aside to cool slightly.
  3. In a medium mixing bowl, place ground pork, ground beef, veggies, and breadcrumbs. In a second bowl, mix the beaten eggs, pineapple juice, lime zest and juice, Worcestershire sauce, jerk seasoning, salt, and black pepper. Pour into the bowl with the meat mixture. Mix using your hands until combined.
  4. Form into bite-sized balls and place onto baking sheet.
  5. Bake on 375 degrees for 20 minutes. Increase the temperature to 425 degrees and bake for an additional 10 minutes, or until browned.
  6. Serve with sauce of choice and enjoy!
